Diwali sweets taste like Diwali because of one spice: elaichi. Kheer, besan ladoo, kaju barfi, shrikhand, gajar halwa, Kerala payasam – almost every festive sweet uses green cardamom. But too little and the sweet tastes flat; too much and it turns bitter and medicinal.
Here is a simple home guide to how much cardamom to use in common Diwali sweets, how to prepare it, and how to pick good pods for your festive cooking.
Whole Pods or Powder? Always Start With Whole
Ready-made elaichi powder loses its smell quickly once the pods are ground. For festival sweets, buy whole pods and crush or grind them just before you cook. The difference in aroma is easy to notice the moment you open the pod.
Quick way to make fresh elaichi powder at home:
- Take the pods and lightly warm them on a dry pan for a few seconds (this makes them easier to grind).
- Grind the whole pods with a teaspoon of sugar in a small mixer jar. The sugar helps the seeds grind fine.
- Sieve once if you want a very fine powder for barfi or shrikhand.
- Make only what you need for the day.
For milk-based sweets, many families use only the black seeds and keep the green shells aside to flavour chai later. Nothing gets wasted.
How Much Cardamom in Each Diwali Sweet
These are home-kitchen starting points. Taste and adjust to your family's liking.
- Rice kheer (1 litre milk): 4–5 pods, seeds crushed. Add in the last few minutes of cooking so the aroma stays fresh.
- Besan ladoo (2 cups besan): ½ teaspoon fresh elaichi powder, mixed in after the besan is roasted and slightly cooled.
- Kaju barfi (1 cup cashews): a pinch to ¼ teaspoon powder. Cashew is delicate, so keep the cardamom light.
- Gajar halwa (1 kg carrots): 5–6 pods, crushed, added once the milk has reduced.
- Shrikhand (500 g hung curd): ¼ teaspoon very fine powder, sieved, with a few strands of saffron.
- Kerala payasam (1 litre milk or coconut milk): 4–6 pods, crushed, added at the end with ghee-fried cashews and raisins.
- Coconut ladoo (2 cups grated coconut): ½ teaspoon powder.
- Sooji halwa (1 cup sooji): 3–4 pods, crushed, added with the sugar.
Simple rule: add cardamom near the end of cooking. Long boiling or frying dulls the aroma.
Why the Size and Sorting of the Pod Matters
Bold, full pods carry more seeds inside. When pods are small, empty or split, you need more of them to get the same flavour, and some add only shell. For sweets where cardamom is the main flavour, this shows clearly.
When buying elaichi for Diwali, look for:
- Even green colour – not pale yellow or brown.
- Bold size – a stated grade like 8mm.
- Full pods – press one; it should feel firm, not hollow.
- Strong smell when you crush a pod between your fingers.
- Non-oil extracted – spices that still have their natural oil keep their aroma.
Our 8mm Kerala green cardamom is sourced from farmers and farmers’ collectives in Wayanad and Idukki, Kerala. After drying, the pods are hand-sorted to remove empty, split and undersized pods, so what you get is even, full pods ready for your festive sweets.
Common Mistakes With Elaichi in Sweets
- Adding it too early. Put cardamom in during the last minutes, not at the start.
- Using old powder. If the powder has no smell when you open the jar, it will not add flavour to the sweet.
- Using too much. Excess cardamom tastes bitter. Start with less; you can always add more.
- Leaving shells in smooth sweets. For barfi, shrikhand and ladoo, use only the seeds or sieved powder.
Beyond Sweets: Elaichi in Diwali Chai and Biryani
Guests come home through Diwali week, and chai never stops. Crush 2 pods per cup into the tea as it boils. For a festive biryani or pulao, add 3–4 whole pods with clove, cinnamon and black pepper while tempering the ghee. Our 4-Spice Combo brings cardamom, clove, black pepper and true cinnamon together, enough for sweets, chai and biryani across the festival.
How to Store Cardamom After Diwali
- Keep the pods whole in an airtight jar.
- Store away from the stove, sunlight and moisture.
- Always use a dry spoon.
- Grind only what you need.

FAQ
How many cardamom pods for 1 litre of kheer?
About 4–5 pods, seeds crushed, added in the last few minutes of cooking.
Should I use whole pods or elaichi powder for sweets?
Buy whole pods and grind them fresh just before cooking. Ready-made powder loses its aroma quickly.
How do I grind cardamom finely at home?
Warm the pods for a few seconds on a dry pan, then grind them with a teaspoon of sugar. Sieve for a very fine powder.
Why does my sweet taste bitter?
Usually too much cardamom, or cardamom cooked for too long. Use less and add it at the end.
What does 8mm hand-sorted cardamom mean?
The pods are bold, around 8mm in size, and after drying they are sorted by hand to remove empty, split and undersized pods.
Do you deliver outside Kerala?
